1987 Salmonella Enteritidis Among Patients at Bird S. Coler Hospital , NYC

An large outbreak of Salmonella Enteritidis occurred among patients at Bird S. Coler Hospital, located in New York City. The lunch served on July 28 was when the exposure to Salmonella occurred. Raw eggs were used to prepare mayonnaise for tuna-macaroni, low sodium salad; these were the implicated vehicle in this outbreak. Although the mayonnaise containing raw eggs was used only for the low-sodium, tuna—macaroni salad, infection was documented among patients served either low-sodium, or regular-sodium, tuna—macaroni salad. Cross-contamination of the salads was likely as the same equipment was used to mixed both salads. The salads were prepared five hours before serving. Poor temperature control likely promoted bacterial growth in both salads. The outbreak strain of Salmonella Enteritidis was isolated from case patients, salads, pooled raw egg yolks, and from chickens that layed the eggs. The eggs that led to this outbreak originated from farms owned by Austin J. DeCoster. Eggs from DeCoster egg operations would again be linked to a large outbreak of Salmonella Enteritidis in 2010.
