1999 Outbreak of Suspected Clostridium perfringens at a Catered Luncheon, Cook Rapids, Minnesota

Employees of a medical clinic in Coon Rapids, Minnesota, developed gastroenteritis after eating a catered luncheon that had been prepared by a restaurant. None of the three stool specimens collected identified a pathogen. Eating chicken dishes (i.e., chicken burrito or chicken enchilada) appeared to be a risk factor for illness. The cause of this outbreak was suspected to be Clostridium perfringens. Food handling errors were evident. Leftover chicken had been stored in a walk-in cooler in pans that were too deep to permit quick cooling. Leftover chicken may have been reheated using a steam table on the day of the catered luncheon; reheating in this manner may have been slow and/or inadequate, permitting bacterial growth.
