An outbreak of Salmonella Enteritidis infections occurred among patrons who ate at a restaurant located in Knox County, Tennessee. The meal date was April 8, 1989. All ill persons had eaten the Hollandaise or Bearnaise sauces. Both sauces had been made with eggs that were heated, but not cooked thoroughly. The eggs were traced to a farm in Indiana.
