In April 2000, McHenry County Health Department (MCHD) investigated an outbreak of Clostridium perfringens at a church potluck in Hebron, Illinois. Twenty-eight outbreak associated cases were identified. Three stool specimens were positive for C. perfringens.

An environmental investigation identified several deficiencies in turkey preparation which allowed for rapid multiplication of C. perfringens. The turkey, stuffing, and gravy were prepared approximately 48 hours in advance of the event. Investigators determined the turkey was partially frozen when it was cooked, leading them to suspect the internal temperature did not reach adequate temperatures to kill bacteria.
