2003 Outbreak of Salmonella Enteritidis Infections at A Cafeteria Linked to Consumption of Coconut Meringue Pie, Ohio
A confirmed outbreak of Salmonella Enteritidis infections occurred among people who had eaten at a cafeteria in Ohio. Consumption of coconut meringue pie was associated with a risk of illness. The meringue was made with raw shell eggs and was baked to 83 F. Adequate cooking of the meringue would be to a temperature of 155 F.
