Jail inmates in Wisconsin reported illness after eating casserole served during the evening meal on August 7, 2008. The casserole was made with leftover ingredients from previous meals, including macaroni, ground beef, ground turkey. Clostridium Perfringens was isolated from leftover casserole. Clostridium Perfringens toxin was isolated in the stool of six ill inmates. Institutional settings were advised not to serve reused meats unless food hygiene, preparation and storage procedures were carefully followed.
