2016 Outbreak of Campylobacter jejuni Associated with Undercooked Chicken Liver Mousse, Clark County, Washington
In July 2016 Clark County (Washington) Public Health staff investigated an outbreak of Campylobacter linked to consumption of undercooked chicken liver mousse. Members of five households dined together at a local restaurant on July 6, 2016. Campylobacter was cultured in stool specimens submitted by 3 members of the dining party. Three cases, two dining guests and one food handler, were classified as probable cases. Consumption of chicken liver mousse were associated with illness, OR 36.1, 95% CI 1.58-828.9). A review of food preparation showed that the sous-chef used appearance of the chicken livers to determine doneness.
