In 2020, 2 cases of E. coli O26 were identified through routine laboratory surveillance. Patient interviews revealed that both cases had eaten at a restaurant located in Shakopee during the week before illness onset. One case ate at the restaurant on July 10 and became ill on July 12. The other case had eaten at the restaurant multiple times in the week prior to illness onset on July 12. Neither person was hospitalized and no one died.

Menu items eaten by the cases included tacos al pastor with cilantro and tomato, steak street tacos, and shrimp tacos. All tacos included corn tortillas, cilantro, onion, salsa, and lime.

The initial environmental assessment was conducted on August 6. Issues related to cold holding and cooking temperatures were identified. A follow-up inspection was conducted August 12. The issues noted previously were corrected.

The outbreak vehicle was not identified.
