Nine infants developed gastroenteritis associated with Yersinia enterocolitica. Eight of the infants had been fed Chitterlings, or Chitlins. Chitterlings are pig intestines. Careful cleaning of the chitterlings, and a long cooking process, are needed to avoid the risk of foodborne illness. Most of the chitterlings had been purchased from the same grocery store chain. Two infants were exposed to the same brand of chitterlings. Families reported a variety of preparation techniques and cooking times. Yersinia survives in cold temperatures and can grow inside refrigerators.
