1994 Outbreak of Salmonella Enteritidis Infections at a Hotel, District of Columbia
A case control study implicated hollandaise sauce as the cause of illness for persons who ate at a hotel brunch on August 28. Salmonella Enteritidis was isolated from the stool from almost half of the ill persons and from the hollandaise sauce. The Salmonella Enteritidis was phage type 8. The eggs were not pasteurized and were held at temperatures that promote bacterial growth.
